I'm not sure if you can alter the age of the characters in ME character creation (I've only ever played the first one and it's been some time) but I'm certain that the Male Ryder will have the option for a multitude of beards if such is desired.

The previous games didn't, and apparently Ryder being untested is part of the character arc, and their father is a character in the game, as is their twin, so the age appears to be set.

People are likely going to call the main guy Dick Ryder.

I'm calling mine EZ.

The Ryders are supposed to be youngins, ten years or so younger than Shepard was. You can customize them, at any rate.
